Wüsthof Classic Ikon kitchen knives are one of the best models of the German brand. After its elegant and sober design we find a high performance knife. What makes them so special? Are they really as good as they say?

Few Knife companies are so well-known worldwide for their quality and know-how like Wüsthof. Founded in 1814, it has developed lines of knives used by thousands of cooks, from students to well-known chefs. They introduce all that knowledge and experience to develop the Ikon line, the most important knife.
They are kitchen knives forged from a single piece of stainless steel with high carbon content. This gives it outstanding hardness and durability, tempered at 58º Rockwell. This shows us that this is a steel of superior quality, resistant even to the most demanding works. In fact, only the Epicure range is above the Ikon line. And it is only by design and price, since the quality of the sheet is very similar. Moreover, from our experience, we can highlight the advantage of the Ikon blade: the cutting edge covers the entire blade, facilitating a better sharpening than in the Epicure.
Pressure in each cut
Wüsthof is reputed to bring a good sharpness. In the case of Classic Ikon, we make the test. For this analysis, we have selected a lace and a threader. They are knives of intensive use in any kitchen and that require the maximum precision in each cut.
We can say that the cut is exceptionally good. Part of the secret is in the handle. Made in black ash, this contoured to a soft touch, velvety and waterproof. Not only is the triple rivet perceived. For their part, these three rivets are the ones in charge of securing the handle to the pin, obtaining a precise control in each cut. All the force exerted on the handle goes directly to the cutting edge, suitable for cutting or peeling.
We tried the lace on products such as cloves of garlic, tomatoes or herbs.
For its correct conservation, Wüsthof recommends to wash the knives by hand. Over time, the handle eventually loses its shine, but the cut stays just as good. Despite extensive use, we have been able to verify that the standard sharpening has lasted up to 3 months.

Wüsthof Classic Ikon kitchen knives are one of the best options for performance and design. They have great resistance and versatility. They are suitable for beginners in the kitchen as professional chefs.
As against, the packaging could be improved: the set of the lace came in a simple carton box. This set cost aprox. 150€ and the set of 7 pieces about 400€. Even so, they are functional knives the domestic kitchen requirements and competing directly with other brands, such as KAI or Zwilling, in the professional kitchen.
